Cajun Sausage Rice Bowl

There is nothing I enjoy more than ending the day with a deliciously easy and hearty one-pot meal. Carbs were created to make you feel all warm and cozy inside, and rice is at the top of the comfort food list for me. Cooked together with vibrant spices and savory slices of sausage and pepper, this one-pot dish is full of flavor in every creamy, comforting bite. After all, sharing stories and laughs while passing around bowls of warm comfort food is the best way to end your day.
1 onion, diced
1 large red pepper, chopped
12 oz. sausage, cut into rounds
2 tsp. cajun creole seasoning
1 tsp. salt
1 1/2 cups brown rice (uncooked)
32 oz. (4 cups) reduced sodium chicken broth
Saute onions and peppers until tender. Add sausage rounds to the pan and cook until slightly crispy edges, about 5 minutes. Stir every so often so it doesn’t stick to the pan. Add cajun seasoning and salt. Add rice and chicken broth and combine well. Cover and simmer on medium to low flame until liquid is absorbed. Fluff with fork before serving. Optional: add chopped cilantro for vibrant color and extra flavor.
Tips: You can swap sausage for salami, hot dogs or boneless skinless chicken. If you do not like the taste of cilantro, you can use parsley instead.
