Salad on a Board
Ok, I don’t like to play favorites, but this concept is IT. Your favorite greens, your favorite ingredients—or even just the ones you have on hand—and the simple lemon dressing mentioned HERE, or a drizzle of tahini, and you’re set—a fun presentation and no dishes required, because you’re eating right off the board. So grab a fork and dig in!
My current favorite:
1 box baby spinach (but arugula, kale, or any lettuce you like will also work well)
7-8 strawberries, halved or quartered
¼ cup pistachios, toasted
Handful of mozzarella bocconcini or some sliced mozzarella
1 avocado, halved and thinly sliced
